Yesterday's lunch: Eat More Color

  
Having reached the point where I am tiring of being ill, I roasted veggies so I could arm my body with lots of nutrients. Loved the color on my plate.


not the sharpest shot--I remember my hands were shaking due to my need to eat, so that's probably part of the problem. =)



I love the rays of color from the beet and hot sauce into the plain yogurt.

Believe it or not, this is a REALLY tasty meal: roasted beet, onion, parsnip (I think) with plain organic yogurt and sriracha hot sauce. Roasted veggies with olive oil rub, sprinkling of garlic powder, wrapped in foil, popped in oven. And of course, salt. mmmmm....
